Chiktaye or herring chiquetaille is one of the classics of West Indian appetizers. A tasty preparation based on crumbled and smoked fish (smoked herring).

Chiquetaille (some say souskay) is the principle of shredding the flesh of the smoked fish and seasoning it with all the traditional West Indian spices, including, of course, chilli!

TASTING: It can be eaten as is without being reheated, can be served on canapés or with salads (tomato, cucumber, raw vegetables...), vegetables and rice.
