My name is intriguing, to say the least. It comes from the knife with which the spices were traditionally cut to prepare me. This knife was of the ‘Chien’ brand, recognisable by the symbol on its blade. I'm a staple of West Indian cuisine, a sort of spicy Creole vinaigrette. I'm tasty and sunny.

TASTING ADVICE :

I'm a brilliant accompaniment to meat, fish and grilled meats. You can also mix me happily with your minced cod or herring. In my recipe for Dog Sauce, we combine condiments and spices for a tasty, mild result. I've got just the right touch of spice, not to mention a zest of typically Creole savoir-faire!
