After maturing in French oak casks, I, Black Edition Alligator, am matured in new burnt casks. One of my toasts is conducted until the inside of the cask is charred, giving it the rough, shiny texture of the skin of the alligator, that fearsome animal, which explains my evocative name.
This particular toasting creates a special interaction between the cask and my rum, giving me notes of brown sugar and intense flavours of spice and smoke.
