I am Bologne Old Black Cane, an Old Rum made exclusively from the "Black Cane" variety of sugar cane. 

My house, the Bologna rum distillery, is the last distillery to have favoured this old variety of cane, originally forgotten by distillers because of its low yield. I draw my aromas from this black cane, which has an exceptional aromatic potential.

An agricultural rum from Guadeloupe, I have aged for three to six years in old bourbon barrels. I have a powerful nose of fresh cane, with complex floral and spicy notes. I develop an exuberant aromatic richness in the mouth.

Nose

Elegant and rich, it opens with greedy notes of salted butter caramel and vanilla. A few notes of prune complete the first nose as well as a delicate and promising woodiness.

Mouth
Rich on candied fruit, cinnamon, with notes of sweet spices, macadamia and pecan. The sweetness of black cane is also present.
The sweetness of black cane, with liquorice and prickly pear. A long, sweet and spicy finish.

Recommendation
To be enjoyed dry, with or without ice. Leave to rest for a few minutes in the glass before tasting.
