I come from R579 sugar cane. Commonly known as red cane, it is grown by the sea in the clay-limestone soils of the Le Moule area in the far east of the island of Grande Terre. My house ‘Papa Rouyo’ left me to rest for 450 days, or 15 months, in vats, then reduced me very slightly to 64%.

Initially giving off fruity aromas and flavours (pear, apple) followed by remarkably lively lemony tones, my aromatic and taste palette will then take you backwards towards notes of sugar and cane juice of great smoothness.
