Are you familiar with lemongrass, a plant that grows in large clumps and is often found on small family plots of land in the West Indies? Gwanaelle Boecasse, artisan syrup maker, has come up with this recipe for a syrup with a taste so representative of these island lands.

 She offers you an alternative to the traditional lemongrass infusions that we drink in the evening before going to sleep. After infusing the lemongrass leaves with Guadeloupean cane sugar, she transforms them into a delicious syrup that I urge you to savour.
With a fine and delicate aromatic structure, my first note in the mouth is rather herbaceous, but quickly gives way to surprising notes of citrus peel.
